Countdown to Earth Day with Meatless Monday!

It is exactly 1 month until Earth Day. And what better way to start counting down to this important celebration than committing to Meatless Monday?

Out of the 3 R's of "going green", reduce seems to get the least attention although it's the most effective for helping our planet. There are many ways to reduce, and one of those is by eating less meat. Raising livestock is an incredibly energy expensive process, and Earth's resources are being pushed the brink to raise meat for human consumption. Aside from being kind to the planet, eating less meat can help reduce the risk of heart disease, stroke, diabetes, and a slew of chronic illnesses. Skipping meat at least one day a week is a sure-fire way of reducing pollution and LDL ("bad") cholesterol! Now that is a win-win situation.

-I will eat less meat and support local foods.
-I will reduce the amount of clothing and luxury items I buy.

I guess eating eggs instead doesn't count...got to feed that chicken.

Thanks for the Earth Day reminder! I vow to go meatless on Mondays, and like Delwin, I too will try to avoid purchasing any non-necessity items (ie: clothes) for the entire month of April. Yikes...hope I can do it! =)

@ Terry: That is true but we can only take it one step at a time.

@ Annie: Congrats on committing to Meatless Mondays! It's hard to separate our wants and needs sometimes, especially with the constant bombardment of advertisements and marketing. I hope you'll succeed with the April challenge!
