These delicious faux-seafood are made with gluten and soy. They're popular components of Chinese cuisine, especially in vegetarian dishes. Gluten and soy products come in many different shapes and sizes and can be cooked in various ways to take on distinct flavors. Also, some Buddhists adopt the vegetarian lifestyle as part of their practice. Since many Chinese are followers of this belief, they often use gluten and soy products to jazz up vegetarian dishes. Besides adding pizazz, these ingredients double-duty as sources of protein.
